Sweet Potato Paleo Waffles

Sweet Potato Paleo Waffles with Poached Egg, Smoked Salmon & Smashed Avocado, Tomato & Coriander with Watermelon Seeds

Makes 2

Ingredients for Waffles

  • 1 large sweet potato
  • 2 tablespoons coconut flour (I used Sukrin)
  • 1 egg & 2 whites
  • Seasoning
  • Coconut milk (enough to make it a bendable consistency)

Other Ingredients

  • 1 St Ewe ‘Boost the roost’ poached egg
  • Smoked Salmon
  • 1/2 Avocado
  • Coriander
  • 2 Tomatoes

Method

  • Pre heat the oven at 200* make little slits in the sweet potato with a knife and bake for 45 minutes/ until cooked
  • Add the insides of the potato into a bowl, mix in 2 table spoons of the coconut flour, 1 egg and 2 whites.  Season with chilli salt, garlic granules and black pepper.
  • Put in blunder and stir in the coconut milk until it turns into a smooth consistency
  • Grease the waffle machine moulds with a little coconut oil
  • Poach the egg on the hob for 4 minutes/ until soft boiled.  I used my favourites and super nutritious of all St Ewe Eggs ‘Boost the Roost”
  • Cut up the avocado & tomato (remove the stone and seeds) into chunks, chop the coriander and squeeze in the lemon juice, season
  • Fold the smoked salmon together like a rose
  • Top with Watermelon Seeds from Mello
